Butterfly Pea Flower Lemonade

Butterfly pea flower lemonade is tart, refreshingly sweet and changes color naturally. The dark blue flowers are steeped into a tea then mixed with sugar and once lemon juice is added it changes from blue to purple!

Why This Recipe is So Good 

  • Completely all natural without any artificial colors. This color changing drink is made with dried butterfly pea flowers and when lemon juice is added the dark sapphire blue tea changes color naturally to a vibrant magenta purple color. 
  • What does butterfly pea flower tea taste like? It has a woodsy and earthy flavor that can be a bit strong when enjoyed plain. It’s sometimes compared to green tea but to me it doesn’t taste similar at all. This tea can be a little bitter and only tastes good with a squeeze of lemon juice and/or honey. It’s caffeine free and makes the best colorful lemonade or mocktail. 

Butterfly Pea Flower Lemonade Ingredients

Dried butterfly pea flowersThese dark blue flowers will give the lemonade its distinct, vibrant color. Once the lemon juice is added the dark blue tea will turn a purple color – magic!

Lemon juice – Freshly squeezed will give the butterfly pea lemonade the best tart lemony flavor. 

Sugar – Cane sugar or white granulated sugar is stirred into the hot butterfly pea flower tea to dissolve so there’s no need to make a simple syrup.

How to Make Butterfly Pea Flower Lemonade

Steep the butterfly pea flowers in hot water for 5-10 minutes in a large pitcher or mason jar. Strain out the flowers, then stir in sugar until dissolved. Allow to cool to room temperature or transfer to the refrigerator to chill. 

In a large pitcher, combine butterfly pea flower tea, lemon juice, and cold water. Stir to combine, chill in the fridge until you’re ready to serve or enjoy immediately over ice.

Ingredients

  • 2 tablespoons dried butterfly pea flower
  • 1 cup hot water
  • ¾ cup cane sugar or white granulated sugar
  • 1 cup lemon juice freshly squeezed
  • 3 cups cold water

Instructions

Notes

Yields: 5 1/2 cups
Store lemonade in the fridge for 5 – 7 days in an air-tight mason jar or bottle.
