Butterfly pea flower lemonade is tart, refreshingly sweet and changes color naturally. The dark blue flowers are steeped into a tea then mixed with sugar and once lemon juice is added it changes from blue to purple!

- 2 tablespoons dried butterfly pea flower
- 1 cup hot water
- ¾ cup cane sugar or white granulated sugar
- 1 cup lemon juice freshly squeezed
- 3 cups cold water
Steep the butterfly pea flowers in hot water for 5-10 minutes in a large pitcher or mason jar. Strain out the flowers, then stir in sugar until dissolved. Allow to cool to room temperature or transfer to the refrigerator to chill.
In a large pitcher, combine butterfly pea flower tea, lemon juice, and cold water. Stir to combine, chill in the fridge until you're ready to serve or enjoy immediately over ice.
Yields: 5 1/2 cups
Store lemonade in the fridge for 5 – 7 days in an air-tight mason jar or bottle.
