Butterfly Pea Flower Syrup

Butterfly Pea Flower Syrup is a vibrant blue colored simple syrup made by infusing sugar and water with dried butterfly pea flower petals. It’s a sweet syrup with a woodsy and floral flavor that makes any drink so beautiful and delicious.

Why This Recipe is so good

  • Butterfly pea flower is a plant native to southeast Asia. Its dark blue petals are dried and can be steeped into a tea or ground into a fine powder to use in food or as an all natural dye. It naturally changes color from dark blue to purple when an acid like lemon juice is added to it. 
  • The flavor of butterfly pea flowers is earthy and floral. This simple syrup recipe is made by steeping dried butterfly pea flower petals with sugar and water. It takes 3 ingredients and just a few minutes to make. 
  • Butterfly pea flower syrup can be used to flavor desserts, mocktails, lemonades, coffee, lattes or iced tea. It adds a sweet and slightly earthy taste and a lovely blue or purple color. 

Recipe Ingredients

Dried butterfly pea flowers. These dried flower petals give this syrup its distinct and unique color and taste. You can find them in health food stores or online.

Sugar. Cane sugar is used to sweeten the syrup. You can use honey instead if you prefer an all natural sweetener.

Water. Filtered water is used in a 1-to-1 ratio with the sugar to create the syrup. 

How To Make Butterfly Pea Flower Syrup

All ingredients, measurements, and instructions are in the recipe card at the bottom of this post.

Step one. To a small saucepot add water, sugar and dried butterfly pea flower petals to a small sauce pot. Bring the mixture to a gentle simmer, this takes about 10 minutes. 

Step two. Remove the pot from the heat, cover with a lid to allow the butterfly pea flowers to steep in the syrup for 10 – 15 minutes. 

Step three. Strain syrup into a mason jar then allow to cool to room temperature. Use immediately or refrigerate until ready to use.

Ingredients

  • ½ cup filtered water
  • ½ cup cane sugar
  • 2 tablespoons dried butterfly pea flowers

Instructions

  • Add water, sugar and dried butterfly pea flower petals to a small sauce pot. Bring the mixture to a gentle simmer, this takes about 10 minutes.
    ½ cup filtered water, ½ cup cane sugar, 2 tablespoons dried butterfly pea flowers
  • Remove the pot from the heat, cover with a lid to allow the butterfly pea flowers to steep in the syrup for 10 – 15 minutes.
  • Use a fine mesh strainer to strain syrup into an air tight container then allow to cool to room temperature. Use immediately or refrigerate until ready to use.

Notes

Yields 1 cup of syrup and lasts for 1 month in the fridge stored in an air tight container. If it starts to look “off” discard immediately. 

Tips and Tricks

  • Add dried lemongrass or lavender buds
  • The syrup naturally changes colors from dark blue to purple when an acid like lemon juice or lime juice is added.
  • Swap the cane sugar for honey. Don’t allow the syrup to boil otherwise the honey will start to crystalize. Heat until hot and the honey has dissolved then remove from the heat.
